STICKY RICE | Duke’s on the Blvd.
YIELDS: 6 CUPS | PREP TIME: 15 MINUTES | TOTAL TIME: 1 HOUR 10 MINUTES
INGREDIENTS:
2 cups sushi rice
2 tablespoons sugar
1 teaspoon salt
1/3 cup rice vinegar
INSTRUCTIONS:
- In a fine strainer, rinse the rice with cold running water until water runs clear. Pour rice into a pot with 2 cups of cold water; let sit for 30 minutes.
- Bring rice to a boil over medium-high heat. Then, immediately turn heat to low and cover. Steam the rice for 10 minutes, remove from heat, and let sit covered for 15 minutes.
- In a small saucepan, dissolve the sugar and salt in the rice vinegar over low heat.
- Pour the mix evenly over the rice and fold gently to mix. Leave rice in front of a fan for 15 minutes or until rice is just above room temperature
