Black Bean Salad
  • 1 can black beans drained and rinsed
  • 2 ears of corn shucked
    and roasted
  • 1 tomato seeded and diced
  • 1 orange bell pepper diced
  • 1/2 bunch of cilantro leaves chopped
  • Juice of 1 lime
  • Salt, white pepper, granulated garlic to taste
  1. Combine all ingredients in bowl. Set aside.
Chipotle Mayo
  • 2 quarts of real mayonnaise
  • 1 7.5 oz. can of Chipotle Peppers in Adobo Sauce
  1. Combine all ingredients in bowl. Set aside.
Seared Ahi Tuna
  • 6 oz. ahi tuna
  • Spring mix
  • Coarse sea salt
  • Fresh ground black pepper
  • Granulated garlic
  1. Combine sea salt, pepper and garlic on a plate, coat tuna with mixture.
  2. Heat skillet, add tuna and sear 1 1/2 minutes on each side or until browned but still pink in the center.
To plate 
  1. Add spring mix to plate.
  2. Thinly slice tuna and place on top of spring mix.
  3. Top with black bean salad and chipotle mayo. 
  4. Enjoy with tortillas!
