Black Bean Salad
- 1 can black beans drained and rinsed
- 2 ears of corn shucked
and roasted - 1 tomato seeded and diced
- 1 orange bell pepper diced
- 1/2 bunch of cilantro leaves chopped
- Juice of 1 lime
- Salt, white pepper, granulated garlic to taste
- Combine all ingredients in bowl. Set aside.
Chipotle Mayo
- 2 quarts of real mayonnaise
- 1 7.5 oz. can of Chipotle Peppers in Adobo Sauce
- Combine all ingredients in bowl. Set aside.
Seared Ahi Tuna
- 6 oz. ahi tuna
- Spring mix
- Coarse sea salt
- Fresh ground black pepper
- Granulated garlic
- Combine sea salt, pepper and garlic on a plate, coat tuna with mixture.
- Heat skillet, add tuna and sear 1 1/2 minutes on each side or until browned but still pink in the center.
To plate
- Add spring mix to plate.
- Thinly slice tuna and place on top of spring mix.
- Top with black bean salad and chipotle mayo.
- Enjoy with tortillas!
