A New Twist on Classic Harvest Fare: Stuffed Turkey Breast with Swiss Chard, Cranberries, Fontina and Parmesan Cheese, with Sautéed Carrots and Green Beans.

Chef’s tip: Butterfly your meat. “The trick to stuffing meat is to butterfly it. This involves splitting the meat almost all the way through so it can be opened out like a book and then tenderizing by working from the inside out.”

Chef Favorite: I make this recipe at home all of the time!

Chef’s tip: Freeze your butter compound. “Mix butter, blue cheese, bread crumbs and parsley. Place on a sheet of plastic wrap, roll into a log shape and store in the freezer. It’s ready to go when you need it, and it melts perfectly as you serve the table. This compound is great for steak, chicken or whatever!”
