Chef Favorite: I make this recipe at home all of the time!

Chef’s tip: Freeze your butter compound. “Mix butter, blue cheese, bread crumbs and parsley. Place on a sheet of plastic wrap, roll into a log shape and store in the freezer. It’s ready to go when you need it, and it melts perfectly as you serve the table. This compound is great for steak, chicken or whatever!”

Chef’s tip: Poach your egg in a ladle. And for a quick potato cake, use leftover mashed potatoes. “Fill a ladle with hot water and crack egg into it. Wait a few seconds for the egg white to precook before slowly submerging both ladle and egg into pot of boiling water.”
