Chef Johnny Graham’s Signature Barbecue Sauce for Chicken and Ribs

  • No. 10 can of ketchup
  • 1/2 cup red wine vinegar
  • 1/4 cup soy sauce
  • 1/2 cup sweet chili sauce
  • 4 ounces brown sugar
  • 1/2 cup Worcestershire sauce
  • 3 tablespoons liquid smoke
  • 1/4 cup celery salt
  • 2 heaping tablespoons cumin
  • 3 tablespoons celery seeds
  • 1/4 cup lemon juice
  • 2 tablespoons sambal or chili garlic sauce

Add all ingredients together and mix well. Keeps for three weeks in the refrigerator.

Johnny’s Barbecue Spice Rub

  • 1/4 cup smoked paprika
  • 2 tablespoons ground cumin seed
  • 3 tablespoons celery salt
  • 2 tablespoons ground coriander
  • 3 tablespoons black pepper
  • 1/4 cup brown sugar
  • 2 tablespoons ancho or chipotle chili powder
  • 2 tablespoons cayenne
  • 1/4 cup blackening seasoning
  • 3 tablespoons
  • kosher salt

Korean Barbecue Rib Marinade

  • 1/2 cup white vinegar
  • 1/2 cup olive oil
  • 3 tablespoons fish sauce
  • 3 tablespoons sambal oelek
  • 2 tablespoons sesame oil
  • 3/4 cup sweet chili sauce
  • 2 chopped scallions
  • 3 tablespoons minced garlic
  • 2 tablespoons minced ginger
  • 1/4 cup salt
  • 2 tablespoons curry powder
  • 3 tablespoons dry oregano
  • 2 tablespoons chili powder

Marinade baby back ribs in this marinade for one hour, then wrap each rack in aluminum foil and spoon marinade over ribs. Add foil packages to oven-proof dish and roast over indirect heat for one and a half to two hours.
