FLORENTINE OMELET | OSCAR’S CLASSIC DINER

YIELDS: 1 SERVING | PREP TIME: 15 MINUTES | TOTAL TIME: 25 MINUTES

INGREDIENTS:

5 eggs
3 ounces red peppers
2 slices bacon, crumbled
2 slices Swiss cheese
Handful of fresh spinach
Splash of heavy cream
Splash of Sprite

INSTRUCTIONS:

  1. Briskly whisk eggs, cream, and sprite in bowl; then set aside.
  2. Sauté chopped red pepper, bacon, and spinach leaves in butter.
  3. Add the egg mixture to the pan and cook over medium high heat until the bottom is firm.
  4. Flip and cook on the other side until the entire egg mixture is firm.
  5. Add Swiss cheese slices on top and fold the omelet onto a plate.
  6. Salt and pepper to taste

The Florentine Omelet is a dish that James introduced one Mother’s Day, and it quickly landed on the menu due to popular demand.
