FLORENTINE OMELET | OSCAR’S CLASSIC DINER
YIELDS: 1 SERVING | PREP TIME: 15 MINUTES | TOTAL TIME: 25 MINUTES
INGREDIENTS:
5 eggs
3 ounces red peppers
2 slices bacon, crumbled
2 slices Swiss cheese
Handful of fresh spinach
Splash of heavy cream
Splash of Sprite
INSTRUCTIONS:
- Briskly whisk eggs, cream, and sprite in bowl; then set aside.
- Sauté chopped red pepper, bacon, and spinach leaves in butter.
- Add the egg mixture to the pan and cook over medium high heat until the bottom is firm.
- Flip and cook on the other side until the entire egg mixture is firm.
- Add Swiss cheese slices on top and fold the omelet onto a plate.
- Salt and pepper to taste

Born in France to a military family, and trained as a sous chef, James has worked for Oscar’s since their opening day in 2004. Skilled and devoted, James has a creative flair when preparing flavorful lunch specials. The Florentine Omelet is a dish that James introduced one Mother’s Day, and it quickly landed on the menu due to popular demand.
