Make perfectly crisp veggie chips in your air fryer.

Veggie chips offer a healthy and flavorful alternative to traditional potato chips. With simple seasonings and a variety of veggies to choose from, this recipe is easy to customize for any taste preference.

Ingredients:

  • 3 purple potatoes
  • 3 petite potatoes
  • 1 sweet potato
  • 1 carrot, large
  • 1 zucchini
  • ½ cup green beans
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic seasoning
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 pinch cumin

Instructions:

  1. Slice all potatoes about 1/16 inch thick and add to a bowl.
  2. Rinse potato slices and dry them well with a paper towel.
  3. Add the dry slices to a bowl and toss withoil, salt, pepper, and garlic seasoning.
  4. Preheat the air fryer to 320 degrees. Add two layers of potato slices to the bottom of the basket.
  5. Air fry for 15-20 minutes or until the potatoes are golden, tossing every three minutes. Then, place in a clean bowl or container.
  6. Thinly slice the zucchini and snap the green beans in half then add to another bowl.
  7. Mix the remaining veggies with oil, salt, pepper, and garlic seasoning.
  8. Cook the remaining veggies for roughly 10 minutes.
  9. Combine all veggies together in a bowl, season with more salt if needed.
  10. Serve immediately or store in an air-tight container for up to two days.

Notes:

Air fryers vary in size and power. If needed, cook in batches. Take out cooked veggies when tossing every few minutes so they don’t get overcooked.
