Veggie chips offer a healthy and flavorful alternative to traditional potato chips. With simple seasonings and a variety of veggies to choose from, this recipe is easy to customize for any taste preference.

Ingredients:
- 3 purple potatoes
- 3 petite potatoes
- 1 sweet potato
- 1 carrot, large
- 1 zucchini
- ½ cup green beans
- 1 tablespoon vegetable oil
- 1 teaspoon garlic seasoning
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1 pinch cumin
Instructions:
- Slice all potatoes about 1/16 inch thick and add to a bowl.
- Rinse potato slices and dry them well with a paper towel.
- Add the dry slices to a bowl and toss withoil, salt, pepper, and garlic seasoning.
- Preheat the air fryer to 320 degrees. Add two layers of potato slices to the bottom of the basket.
- Air fry for 15-20 minutes or until the potatoes are golden, tossing every three minutes. Then, place in a clean bowl or container.
- Thinly slice the zucchini and snap the green beans in half then add to another bowl.
- Mix the remaining veggies with oil, salt, pepper, and garlic seasoning.
- Cook the remaining veggies for roughly 10 minutes.
- Combine all veggies together in a bowl, season with more salt if needed.
- Serve immediately or store in an air-tight container for up to two days.
Notes:
Air fryers vary in size and power. If needed, cook in batches. Take out cooked veggies when tossing every few minutes so they don’t get overcooked.
