Ingredients:

  • 1 cup pistachios
  • 1 cup cashews
  • ¾ cup pecans
  • ¾ cup almonds
  • ½ cup pumpkin seeds
  • ½ cup dried cranberries
  • ½ cup dried pomegranate seeds
  • 2 tablespoons avocado oil
  • 2 tablespoons maple syrup
  • 2 teaspoons paprika
  • 2 teaspoons salt

Instructions:

  1. In a small bowl, whisk together the maple syrup, avocado oil, salt, and paprika until well mixed.
  2. In a large mixing bowl, combine pistachios, cashews, pecans, almonds, pumpkin seeds, dried cranberries, and dried pomegranate seeds.
  3. Coat the nuts by pouring the maple syrup mixture over the nut blend. Toss until everything is evenly coated.
  4. Line the air fryer basket with parchment paper. Spread the nut mixture in a single layer for even roasting. Air fry at 300 degrees for 10 minutes, stirring halfway through.
  5. Once the mix is roasted, transfer the nuts to a plate to cool completely. Break up clusters if desired.
  6. Store in an airtight container to maintain freshness.
