Cook Time: 1 hr | Resting Time: 1 hr
Total Time: 2 hr 15 min
Ingredients:
- 3 large egg whites, room temperature
- ¼ teaspoon cream of tartar
- ¾ cup granulated sugar
- ¼ teaspoon vanilla bean paste
- ½ ounce dark chocolate, melted
Instructions:
- Preheat the oven to 200 degrees and line a baking sheet with parchment paper or a silicone liner.
- Using a stand mixer, whisk together the egg whites and cream of tartar on medium speed until frothy.
- Gradually add in granulated sugar (about 1 tablespoon at a time) and turn the mixer up to medium-high speed. Beat the egg whites until soft peaks form (about 5-6 minutes), and then add in the vanilla bean paste.
- Continue to beat the meringue until stiff peaks form.
- Spoon meringue into a piping bag fitted with a large round tip. Holding the bag perpendicular to the baking sheet, pipe 2-inch-high mounds, spacing them about 1 inch apart on the baking sheet.
- Bake the meringue at 200 degrees for 1 hour. Then, turn off the oven, and allow the meringue to dry in the oven for another 1-2 hours.
- After removing the meringue from the oven, allow it to cool completely to room temperature.
- Use the melted dark chocolate and a food-safe brush or toothpick to paint ghost faces on the meringue.
Notes:
Enjoy the ghosts by themselves or use them as cupcake toppers.
